Sunday Night

Well,  I have literally had a day of resting.  I don't know whether it was the full on weightlifting session yesterday morning or the two hour bushwalk yesterday afternoon or the night out, went to see the comedy Pam Ann show at the State Theatre, but this morning when I awoke, my body felt heavy and my head felt fuzzy!  So I called off all social engagements and just hung around at home (yeh, right.......) and really did take it easy as I was worried that my cold/flu would worsen and then I wouldn't be able to train, you get the drift...............

So rested I did and tonight I am feeling better, in fact so much better I am looking @ Christmas recipes.  Yes,  I am a cook..............I have not felt like cooking or really baking for the last couple of years, my motivation had dropped to almost zero................. the funny thing is because I am on such a strict diet, I am now fantasizing about food, checking out recipes, thinking about all the yummy food I can eat when I finish my comp, what I can make, how I might just be motivated to cook again, YES!!!!
So maybe this is a really good byproduct of sticking to such a strict diet, I will keep you posted with this one :)

Talking about food, it is really interesting how I like to vary my diet, as does everyone!  When you are eating the same thing day in day out, I am thinking of different ways to cook my food.  First off I steamed everything and then I thought why can't I dry pan cook in a non-stick pan?  So I have worked out which white fish is quite oily, which is barramundi, but most fishmongers/supermarkets sell the fillets WITHOUT the skin on!  Now barramundi is delicious when pan cooked with the skin on as it has a natural oil and the skin goes nice and crispy and tastes delicious.  I also now cook the asparagus in the same pan and it rolls around in the oily fishy moistness from the fish and tastes even more delicious.  So that is one way of mixing up my food.  The other way is pan frying the chicken and the broccoli, so a stir fry with no oil, if I want I can add a little water for moistness, but this is another yummy way to change my method of cooking to spice up the sameness of my food , day in day out.

Also, on the weekend, I tend to eat less and eat later, therefore I will have my egg white omelette with chopped baby spinach, chopped tomatoes and capsicum, the salad ingredients that I would normally have had, with my chicken, for the next meal.  As I am sort of combining those meals, my omelette is sooooooooooooooo much better :)

Today was about focusing on getting better, resting and fantasizing about food.  Feeling subdued internally and externally because of the cold/flu (I would say, as I thought from yesterday, I would be back to more of my normal self) and thinking about what I need to do for myself.  What came out of my mini meditation was rest, lots more vitamin c and love for myself (not being too hard on myself as I am not 100% better)
